Herbs were the equivalent of air fresheners. Herbs crushed underfoot would release fragrance into the damp air and mask the smell of open sewers - the "foul and pestilential airs." Aromatic Herbs such as Chamomile, sage, basil, mint, were in great demand. Lavender was not as well known as it is now. It came from southern France and dry regions and was expensive.

Until George IV, English monarchs had a royally appointed "Strewer of Herbs" whose function was to ensure that the Royal apartments were scented and free of disease through judicious use of herbs strewn on the floors.
