These are light, very lemony and with the final glaze, they turn super lemony, sticky and moist.
2 lge cups flour
4 tsp B Powder
1 cup sugar
4 oz butter
1 ¼ cups milk
Grated rind of 1 lge or 2 small lemons
1 tsp vanilla essence
2 tbsp lemon juice.
Mix flour and sugar and baking powder in bowl. Melt the butter, add milk, eggs & lemon rind & vanilla and stir. Add liquids to dry ingredients and combine until just mixed. Bake at 200 degrees celsius for 10 mins.
Stir together ¼ cup lemon juice and ¼ cup sugar. (Can heat in microwave to melt sugar if nec.) Drizzle over muffins as soon as removed from oven. Leave in pan for a few minutes.
Serve with shoulder pads (you) on a boardroom table (the mufins).
